Between kids being home for Winter Break and the general hustle and bustle of the holidays, meals tend to be comprised of snacks, takeout, or random leftovers. Which means proper nutrition is an unfortunate afterthought.
Though the holidays are busy, you should still start the day with a delicious and nutritious breakfast. We’ve conjured up 5 tasty breakfast recipes you can make in the microwave. They’re perfect for maximizing time with your family on Christmas morning, and minimizing preparation and cleanup.
1) Egg Sandwich
Eggs are incredibly easy to cook in the microwave. I take a small microwavable bowl and spray it with PAM to prevent the eggs from sticking. Pour in the eggs, give them a quick mix and put in the microwave for about one minute. Warning: They can start popping towards the last five seconds, so cover the bowl with a paper towel to prevent a mess in your microwave.
Toast some bread or an English muffin and place the egg in between. Then add your cheese of choice: American and Cheddar are popular options, though I’m a big fan of Feta.
2) French Toast
Believe it or not, you can make a simple French toast in a cup just using the microwave. The ingredients are found in most pantries and refrigerators: butter, milk, eggs, cinnamon, and sugar can be used with any leftover bread (though I recommend French bread).
Mix the ingredients together, pop in the microwave for about 90 seconds, and you’ll have delightful French toast.
3) Breakfast Tacos
Such a delicious breakfast option! Microwave a few eggs (as described in recipe #1), and place on a tortilla and top with your choice of cheese, salsa, and any other fixings you prefer. When the tacos are assembled, pop them in the microwave for about 30 seconds to warm them up.

4) Blueberry Muffin
This delicious yet simple breakfast option is called a blueberry muffin in a mug, though it’s really a cross between a blueberry muffin and a blueberry pancake. The ingredients can be mixed and cooked in just a coffee mug, and the dish takes only 90 seconds to cook in the microwave. Top it with syrup or eat all on its own.
5) Egg Quiche
Spice up eggs with this one-minute quiche. The quick recipe calls for the addition of milk and butter to make the eggs fluffy and then you can add any toppings you choose. My favorite toppings for this dish are chopped ham, Swiss cheese, and spinach, but you can also try out tomatoes, green onions, and cheddar or mozzarella cheese for a different range of flavors.
